Lockhart, an ideal layover spot between San Antonio & KC, Mo., became a rest stop for cowboys driving cattle on the Chisholm Trail, many of whom were Black or Hispanic. These cowboys’ taste for the flavors of charcoal & barbacoa stoked the region’s appetite for smoked meat.

This book I found in a charity shop provides great context to #Lockhart's memoirs of the #Union and the people involved.
The 4th Duke of Hamilton was a right two-faced slimeball. He had a legitimate claim to the throne of #Scotland, but when he realised no-one would support it he decided the Union was his next best option (lots of land in England). He betrayed his Jacobite friends many times over but managed to keep stringing them along.
"Did not the Earl of Ilay in all companies make it his publick and constant toast, and write inscriptions on the glasses in the taverns of Edinburgh, 'To the dissolving of the Union'?
Did not all the Scots members, Whigs as well as Tories, agree unanimously to the motion which was made in the House of Lords for dissolving it?"
Our Precious Union has always been a political prison.
