Last Bronx.
One of SEGA's alternatives to the Virtua Fighter series, this game introduced a darker tone & weapons into the fighting mix.
Something I personally like about the game is the "anime" styling the game has, especially in the cutscenes.

SEGA's slightly lesser known brawler made use of the Saturn's high resolution mode to bring you weapons based street fighting with smooth animation & 3D backgrounds.

Floofy Shark Presents... some SEGA beat 'em ups.
It's not just Virtua Fighter. SEGA made quite a few beat 'em ups. And here are 3 of them:
> Fighters MegaMix
> Fighting Vipers
> Last Bronx
Virtua Fighter & Fighting Vipers often get talked about. But SEGA did have another Beat 'Em Up called Last Bronx.
It made heavy use of weaponry, and had some Anime-style cutscenes too.
