I’ve been complaining a lot about Swedish bread here, but what I didn’t mention is that they have knäckebröd here and that’s on a totally different level than in Germany. I’ve always loved knäckebröd. Since I was a little child. Could eat it day in and out. Heaps! So, in this regard, I’m in heaven.
#GretaThunberg was arrested by #Danish police for protesting #UniversityOfCopenhagen's links with #Israel. I imagine this isn't the sort of publicity the university wanted.
The photo accompanying the news article isn't really flattering to Greta because she is chewing. It did make me happy when I focused in on her hands to see that her snack is very a #Swedish rye crispbread (#Knäckebröd). A sensible choice.
In Iceland we call it hrökkbrauð. I haven't had one in years but it makes me remember breakfast at my grandparents' house when I was little.
This will become Sourdough Discard Knäckebröd in 4 hours if it grows a little, or 20 hours if it doesn't in the next hour or so.
As with any good recipe, you substitute the main ingredient and then declare it excellent. /s
It's 450g of 100% hydration medium rye starter (instead of wheat I assume), and 150g of all purpose instead of rye flour.
It does have the toasted and crushed caraway seed though.
Not true to form knäckebröd in my mind but sort of.
