Schnitzel
For our Christmas Eve dinner, just the three of us, we made seitan schnitzel with sides of roasted Brussels sprouts and potatoes. Unfortunately I ran out of time to make a gravy, so I fried up some onions.
I remembered from last time that we needed more egg replacer, so I made 6 equivalent for dredging. I think I could have halved the peppered flour. We also heat way less oil in the dutch oven, which does mean the sides don’t fully fry.
The nice thing about this seitan (beyond being deliciously deep fried) is that the earlier baking step makes it much more tender than our usually favorite style of seitan.
I tried making #seitan this morning using the oven. It came out very bread-like.
So I chopped up a couple of pieces and noticed it looked like sausage. Put it in the pan with some olive oil, salt, pepper and fennel seeds and browned it then added it to my pasta for lunch. It tasted pretty good to me with the sauce. I'm curious to see how it holds up until lunch.
Anyone have some good seitan recipes?

Our Very Vegan Christmas dinner: Pernil (Puerto Rican style roast "pork"), glazed ham and arroz con gandules, with a side of roasted brussel sprouts. I've made the vegan ham before but the pernil was a first, an experiment of my own design. I was happy with how it came out. It even had the crunchy "skin"! The meats were all seitan, made from scratch.

Wet stuff
4 t ketchup
1/2 cup soy sauce
1.75 cups water
Big squirt Sri racha
Small squirt Lime juice
Dry stuff
2 cups vital wheat gluten
1/2 cup garbanzo flour
1/2 to 3/4 cups nutritional yeast
4 t onion powder
2 t garlic powder
Method:
Dump the wet stuff into the bowl.
Dump the dry stuff into the bowl.
SET CRUST TO DARK! Do a knead cycle before the bake cycle.
