Bowled Over
For dinner did a bit of a remix of recipes to make some big hearty bowls:
- Roasted Sweet Potatoes
- The Best Kale Chips
- The peanut sauce from these Tofu Lettuce Wraps
- Steamed broccoli
- Red onion
And then finally the glaze for chickpeas in Minimalist Baker’s Everyday Cooking pp. 149, but on shelled edamame that I’d steamed in bag for 2/3rds the time before browning in oil and then sautéing in the glaze. I did a double recipe whisked together:
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1/2 tsp ground or fresh ginger
- 1/4 tsp ground coriander
- 1 tbsp maple syrup
- 1 tbsp soy sauce
- 1/2 tsp chili garlic sauce
It ended up being a delicious flavor combination! A lot of chopping required, so it’s not a fast recipe, but well worth it.
