Today i made #eggfree pancakes by just tossing flaxmeal into pancake mix and adding extra milk until it was the right thickness. little gummy but it was my almond flour pancake mix so odd texture is to be expected. not bad!
The end goal is to figure out a lower carb pancake mix that I can pre-make with my own ingredients. Almond flour, some sort of starch like arrowroot, pinch of salt, and flax meal...Plus of course the baking soda and cream of tartar to make sure it rises.

I've been experimenting and this worked. I have not yet tried to scale up.

Makes only 1 tortilla ~ 6" diameter

10 g blanched almond flour
4 g ground golden flaxseed
2 g guar gum
17 g water
arrowroot flour for rolling

Combine all ingredients, knead a little bit, roll, cook on medium heat. I used a stainless steel skillet, no grease.

Could probably use a pinch of salt.

1 Garlic Clove, crushed
2 (100g), Mild Italian Sausages, crumbled, casing removed

Macros & Ratio:
6g net carbs, 17g protein, 73g fat
3% carbs, 9% protein, 88% fat of 740 calories

Tip for #LowCarb cooking ... #GrainFree coating

- dip shrimp in egg wash made with 1 egg white + 0.5 Tbsp water
- coat shrimp in mixture of 4 Tbsp almond flour + 4 Tbsp grated parmesan + 0.5 Tsp baking powder
- pan fry in a little olive oil + butter for 3 minutes

2/2 I use a Dash Mini Waffle Maker to make a #GrainFree #LowCarb alternative to bread

1 egg white
1/2 cup cheese, shredded (30g)
1 tbsp almond flour
1/4 tsp baking powder
1 tsp spice(s) of choice ― I used "Everything but the Bagel" spice
salt

- Stir egg white w/ cheese
- Add rest of ingredients
- Pour in preheated, greased waffle maker & close top
- Cook 4 min
- Remove & let sit a few min to crisp.

1 serving: 1g net carbs | 12g protein | 14f fat | 1g fiber
