Bowled Over

For dinner did a bit of a remix of recipes to make some big hearty bowls:

And then finally the glaze for chickpeas in Minimalist Baker’s Everyday Cooking pp. 149, but on shelled edamame that I’d steamed in bag for 2/3rds the time before browning in oil and then sautéing in the glaze. I did a double recipe whisked together:

  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp ground or fresh ginger
  • 1/4 tsp ground coriander
  • 1 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1/2 tsp chili garlic sauce

It ended up being a delicious flavor combination! A lot of chopping required, so it’s not a fast recipe, but well worth it.

Very satisfying and nutritious, non-egg #breakfast for me. It's not vegan but you could substitute your own nutmilk or something if you want. For me, this is it. Although I do still enjoy a nice veggie omelet, other times.

Cauliflower Nachos

Tonight we made a nacho bowl out of our favorite roasted cauliflower, our favorite kale chips, our favorite cashew queso, some Gardein crumbles (I will never call it “ground be’f”) sautéed with taco seasoning, and beans (black and pinto), red onion, red pepper, and jalapeños. Delicious!

I believe in addition to being tasty and vegan (which we are) it is also grain free and gluten free (which we are not). By chance the grocery was out of regular cauliflower so I got the purple instead. Anthocyanins!

Today i made #eggfree pancakes by just tossing flaxmeal into pancake mix and adding extra milk until it was the right thickness. little gummy but it was my almond flour pancake mix so odd texture is to be expected. not bad!
The end goal is to figure out a lower carb pancake mix that I can pre-make with my own ingredients. Almond flour, some sort of starch like arrowroot, pinch of salt, and flax meal...Plus of course the baking soda and cream of tartar to make sure it rises.

I've been experimenting and this worked. I have not yet tried to scale up.

Makes only 1 tortilla ~ 6" diameter

10 g blanched almond flour
4 g ground golden flaxseed
2 g guar gum
17 g water
arrowroot flour for rolling

Combine all ingredients, knead a little bit, roll, cook on medium heat. I used a stainless steel skillet, no grease.

Could probably use a pinch of salt.
