Schnitzel
For our Christmas Eve dinner, just the three of us, we made seitan schnitzel with sides of roasted Brussels sprouts and potatoes. Unfortunately I ran out of time to make a gravy, so I fried up some onions.
I remembered from last time that we needed more egg replacer, so I made 6 equivalent for dredging. I think I could have halved the peppered flour. We also heat way less oil in the dutch oven, which does mean the sides don’t fully fry.
The nice thing about this seitan (beyond being deliciously deep fried) is that the earlier baking step makes it much more tender than our usually favorite style of seitan.
