Once again, about a month since the last batch, it's time for garam masala! Kid1's pounding this batch!
One trick I learned when toasting spices is that thin coriander seeds toast fast, burn and get bitter, so best to add later on after heat is off, it'll toast in the residual heat.
Recipe for this as in thread below. Tonight's batch includes 1 g of ajwain and 2 pinches each of dried basil & oregano, ½ pod star anise

Kid1 helping make a new batch of garam masala. She picked out and measured out all the spices. Glad she's getting a quick exercise in figuring out a) what each of the spices look like and b) where they are kept
