And you're right, the outcome is gorgeous - clearly worth the complication.
I have done a number of double knits now, and none of them have been really comfortable to work. Using a larger needle to get a looser stitch does make it easier, but then the gauge look odd/sloppy.
One option might be to reduce the **yarn weight** in the section of double knit? E.g. a sport weight and a dk.
