SPICED CRANBERRY FRENCH 75

Β½ oz lemon juice
Β½ oz simple syrup
1 oz gin
float sparkling wine

Garnish: none
Method: I normally batch this one, adding 20% water to dilute. Then once both bottles of batch and champagne are chilled down, combine them in glass (heavy on champagne) and serve to the group. The picture has a reddish color because this one used spiced cranberry simple syrup instead of regular simple.

Cranberry syrup: I brought water to a boil, then brought the heat down to medium low. I threw in a bunch of sliced cranberries, a cinnamon stick, a star anise, allspice, black pepper, cloves, and a pinch of salt. I let them all cook together for an hour or so. Added 1.5x sugar compared to the water, killed the heat, stirred to incorporate fully, then strained into a bottle after it cooled.
