Stewart TolhurstThe christmas cake has been inexpertly covered with home made marzipan (50/50 almonds/icing sugar, bind with egg white and a little rosewater). We’ll leave it to dry for a few days before covering with (shop bought!) fondant. We’ve found some cookie cutters that will hopefully make brightly coloured 3D fondant trees to sit atop the iced cake. #ChristmasCake #festive

I use ready to roll fondant icing. Much better than the rock hard snow scenes of royal icing that was all that was available during my childhood - though it was even chance that it was the crunchy silver balls that made your teeth hurt!
