WildSown Wicked Awesome Shortbread

3:2:1 flour:butter:sugar (cups)
3:2:1 lemon juice:vanilla:salt (tsp)

Fold together, slowly folding flour in last, work with wooden spoon until evenly blended, wrap block of dough in parchment & chill overnight. 

Cut into travel-size bars of soap (2x2x1in), set on parchment. 

15min at 350f with bottom edges beginning to brown. Put back outside to chill 5min. Serve.

Makes 50ish cookies. (1/2)

Chris wanted a different variety of sugar cookies this year. So, instead of the butter cream frosted variety, this one is a lofty sugar-sprinkled one.

As a variant, he also wanted to see what happened if we used sugar in the raw instead of simple beet sugar. A bit more of a molasses hint to the flavor and the crystals were spread out a bit by the heat.

My wife baked a record-breaking amount of cookies in one day to pack them in nice boxes and send them to our relatives as Christmas presents.

We don’t meet often, so they didn’t know how good she is at cookie baking now and had never tried her cookies before. So we are both waiting for feedback impatiently.
