#Chocolatiers of Mastodon! I need help.
I'm making chocolate covered things in silicon moulds. I melt dark chocolate in bain marie and pour over things like candied peel, ginger or kumquat, then leave to set at room temperature. Result is delicious, but appearance is piebald mixture of nice glossy dark brown and pale dusty bits.
I've tried Belgian and Ecuadorian choc with 55%-77% content. Should I use cooking #chocolate instead? (Assume taste is less good?)
