Around the sides? Chocolate fingers, standing tall. On top? Joyful chaos: milk + dark buttons, swirled discs, styled into yellow petals and a scatter of M&Ms. Hidden inside: a secret pocket of salted caramel, so every slice delivers its own golden surprise. How to make it: โ€ข Bake your favourite two/three layer sponge (chocolate, vanilla, anything you want really - the funโ€™s in the topping). โ€ข Whip butter, icing sugar, cocoa and cooled salted caramel into buttercream. โ€ข Sandwich the cakes with both buttercream and a generous drizzle of melted salted caramel. โ€ข Frost the outside. โ€ข Optional- drizzle with more caramel for good measure. โ€ข Fence it in with chocolate fingers and pile the top high with chocolate goodies. Beat the butter with an electric whisk/stand mixer for 3 - 4 mins until pale and fluffy. 2. Gradually add the icing sugar (and cocoa if using), beating slowly at first, then on high until smooth. 3. Beat in the salted caramel sauce until fully combined. 4. If the buttercream feels too stiff, add 1 tbsp milk or cream at a time until itโ€™s spreadable. 5. Taste and add a tiny pinch of sea salt if you want more โ€œsaltedโ€ punch. ~ This will give you enough to: โ€ข Sandwich the two cake layers (along with the extra caramel youโ€™re adding in). โ€ข Frost the outside. โ€ข Pipe swirls or spread a thick rustic topping."

We've been up to alsorts - craft days, baking days, farm day out, egg hunts, walks, cafe trips, been to the cinema to see Minecraft, the kids had some new Clarkes shoes as they've already outgrown the other set (why must they grow so much ๐Ÿ˜ญ) park visits, walks, seeing family and of course eating yummy food! (Plus also had to drag the kids to Grimsby maternity ward as I had a fetus growth scan which took over 3 hours waiting time) Was nice to have some time off work to be able to do it but also definitely need the work to be able to pay for it! ๐Ÿ˜‚ (the eldest is lacking in photos because 1) she isn't into joining in on photos but 2) she was in Hong Kong the entire time anyway)"

The kids wanted to do some Easter Treats and they wanted to try an easy 'no bake' idea - which doesn't use many ingredients, doesn't take long and doesn't break the bank. ๐Ÿฃ 400g milk chocolate (or any flavour) ๐Ÿฃ Digestive biscuits (any biscuit/cookie works though) ๐Ÿฃ Malteasers/Mini eggs/M&Ms (any chocolate works - you can use sweets etc) ๐Ÿฃ Spring sprinkles ๐Ÿฃ 100g Butter Instructions - 1. Crush your biscuits as fine as you want - mix until blended. 2. Melt your butter, add to biscuit mix and blend. 3. On a waxed paper-lined tin, spread out your biscuit mix and push down til it's firm with back of a spoon and smooth. 4. Put your chocolate in a glass bowl and place in microwave. Microwave for 40 seconds. Stir chocolate with rubber spatula. Place back in microwave and cook on high for 20 seconds. Stir. Continue microwaving for 20 seconds and stirring until chocolate is fully melted. Alternatively, you can melt chocolate over a double broiler - whichever is easiest. 5. When chocolate is melted, pour over the crushed biscuits and spread on an even layer. 6. Decorate accordingly on the melted chocolate! 7. Let biscuit bark set for about an hour before breaking into pieces. If you want it ready faster, place in fridge for about 30 minutes. Store bark in an airtight container for up to two weeks (if it lasts that long!)."
