Wok choice is shaped by stove type, not just size. Round-bottom carbon steel (like the Craft 14-inch) demands a gas flame and wok ring; flat-bottoms suit electric coils and smooth ranges. Hand-hammering creates dimples that trap seasoning oil, accelerating non-stick development versus polished steel. Lifespan is indefinite if seasoning is maintained—damage is usually reversible.

Side note on the seasoning. A mistake I made in the past in seasoning pans was to leave on too much oil. I now apply oil then wipe it all off with a clean cloth (it becomes matte, not shiny). There is still a very thin layer left no matter how hard you wipe. This ensures structurally sound seasoning that won't chip or crack. I also wash between layers. A scrub pad for non-stick and plastic surfaces with dish soap is fine. #CarbonSteel #CastIron

I want to show off my new carbon steel pan that I used for the first time last night, making pizza. It's from Darto, an Argentinian company, and made from a single piece of 3 mm steel sheet. It is indestructible, no welds, and surprisingly inexpensive: a bit less than $100 with shipping.

The copper colour is from the 5 layers of seasoning I did, heating the pan in the oven to just below the smoke point of the super thin layer of sunflower oil (415°F) for 45 minutes. It will blacken with use. My pizza slid right off, even the caramelized cheese.

I did have a lighter MadeIn pan for a while but their handle design was just too awkward and I ended up donating it. This one is a bit lighter and bigger than my cast iron pan. #ADIML #CarbonSteel #Cooking

@rationaldoge @vosje62 No better time than now to change to #StainlessSteel, #CarbonSteel or #CastIron for your #cooking.

Just to be sure that that is what you get, without the #nasty #chemicals.
