I know the wings on these could be folded back for towing/ground transport, and I'm assuming that the white thing he is holding is some sort of cover, but I'm having difficulty parsing how it works.

Нормы выработки при монтаже видео.
На самом деле универсального ответа нет, но есть практическая формула из кино: 1 минута мастера "собирается" 1 час. Схожий подход мы видим и при создании сюжетов на тв, там чуть другая специфика: нет звукорежиссера и отдельного графиста. Так что при монтаже тв сюжетов ты зачастую еще и тратишь время на сведение звука (а иногда и подбор аудиотрека), на титр-плашки, гео-титры и прочее.. На живом примере: прямо сейчас я сдаю еженедельную получасовую программу для телеканала. Нас два монтажера, начали мы где-то в 13 часов, а закончим завтра, в районе 9-10 утра (у нас же еще правки от редакции будут).
Важные выводы:
Нормы времени в монтаже весьма условны
Каждый проект уникален
Необходимо закладывать время на непредвиденные правки
Важно учитывать все дополнительные задачи при оценке сроков

Granted, #competition is good and given that #Steinberg needs to convince people to use their suite over #FLOSS is good for everyone because it forces everyone to "up their game"!
(And yes, I still hate myself for not having bought a perpetual Hobbyist License for #Eagle when #CadSoft was still an independent company. I should've paid that €125 back in 2008!)
