Gabon is represented by Baked Bananas Gabon. The reminded me of the dessert for Benin, bananas with orange sauce. In this recipe, the orange juice gets used in the egg wash instead of the sauce. Simple and delicious, served with sour cream!

Gabon is represented by Gambon Mustard Chicken! “This is a Gabonnaise version of the classic West African Poulet Yassa that uses mustard rather than chillies as a flavouring”- So says the Recipes of Africa book I pulled this and the Baked Bananas Gabon recipes from. I am not sure I trust the authenticity of the recipes in the book. I try to find a few different sources for each recipe. Sometimes that is challenging. I often find that others doing similar adventures and blogging about it are recycling the same recipes but it’s hard to find the original source. This one came up a lot. It was delicious all the same. Really great way to use up the stockpile of onions one has this time of year!

France is represented by île flottante. Custard and caramel! 61 countries in and I’ve made custard and caramel a few times. I’m getting better but not at 100% success rate for either yet. Delicious practice though! This was my first time poaching meringue. Less fussy than baking and much faster!

France is represented by pot au feu! Soul food. This was very reminiscent of Sopa de Gallina (Salvadoran Chicken Soup) from El Salvador. It touched the same part of my heart. The broth was glorious. The veg reminded me of Jigg’s Dinner. Just like home, but from France.

Finland is represented by Mustikkapiirakka (Blueberry "pie"). Like the soup, this resonated with my cultural heritage. I have eaten my weight in blueberry buckle a thousand times over and this hit that same sweet spot. Beautiful. Simple. Served with homemade vanilla ice cream. I do love the process of finding foods from far flung places that feel like “home.” Perhaps something about the North Atlantic ties Newfoundland to Finland culinarily.

Finland is represented by Lohikeitto (Finnish Salmon Soup). This was gorgeous and spoke to my heart song. I have eaten so many variations on chowder in my life and loved them all. It has been many years since I’ve cleaned fish and taking off the skin was not a smooth process. That said, it made for beautiful stock and pup was super pleased to get the leftover boiled skin! This was definitely a favourite.

Fiji is represented by Fijian Mud Pie! I made a no-churn ice cream (so good!) and nutella for this recipe. This was delicious! Fijian mud pie might just be my gateway to making all my own ice cream! Bonus is that the homemade nutella works as the chocolate base for smores made with homemade marshmallows.
