Honduras is represented by Honduran Pot Black Coffee. Took a bit to find Honduran beans but worth it! Normally, I have my coffee with milk but this was a delicious departure. Sweet and rich.

Honduras is represented by Baleada with refried beans, queso fresco, Honduran sour cream, and eggs. First time making refried beans and they are very similar to pease pudding. Beautiful dough to work with for the flatbread. Hearty meal!

Lael will ride around the world again – even faster this time.
After having become the fastest woman ever to cycle around the world in 2024, this time she's trying to be the fastest human being ever to do so.

She has to beat 78 days 14 hours 40 minutes which equates to 240 miles (386 km) per day! For 78 days!

It's absolutely bonkers, but I believe Lael can pull this off. She is an absolute inspiration and I'd love to see her succeed.

Haiti is represented by Haitian Espageti. I made the hot dogs for this but not the pasta. I made 2lbs of hot dogs and they were gone the same day. No leftover pasta, no leftover sauce, no leftover hot dogs. Delicious. The epis is very reminiscent of Afghan Green Sauce. Soul food. So good.
