Food Adventures Continue!
Gabon is represented by Gambon Mustard Chicken! “This is a Gabonnaise version of the classic West African Poulet Yassa that uses mustard rather than chillies as a flavouring”- So says the Recipes of Africa book I pulled this and the Baked Bananas Gabon recipes from. I am not sure I trust the authenticity of the recipes in the book. I try to find a few different sources for each recipe. Sometimes that is challenging. I often find that others doing similar adventures and blogging about it are recycling the same recipes but it’s hard to find the original source. This one came up a lot. It was delicious all the same. Really great way to use up the stockpile of onions one has this time of year!
