Cook French green beans twice in a HOT, un-oiled pan, to ideally start building up a sear on them while gradually driving water out of the green beans, keeping the wok hot and dry. Cook a third time with a bit of oil in the wok. Top the green beans with appropriate sauces & seasonings before stir frying... in this case, oyster sauce, chili garlic sauce, a little unagi sauce, a little Thai sweet chili sauce, white pepper, garlic powder, and sesame seeds.
