I have a chia seed pancake recipe that I love. It is pretty basic: flour, chia seeds, baking powder, cinnamon, almond milk, maple syrup (in the batter) and vanilla extract. But it also includes a small about of apple cider vinegar. I've looked at other recipes and they all include the vinegar. I can't tell that it does anything to the taste, so I'm guessing it must play a role in the overall chemistry. Can someone smarter about food (maybe

I have no issue with it. I'm not looking to remove it or substitute for it. I'm just curious about its purpose.
