What a delicious Mediterranean meal!
Steven found me a great vegan halloumi recipe that I made last night and he put some on the BBQ for lunch. While not as firm as I would have liked (some escaped through the bars), the taste was excellent.
The plate also has some home grown tomatoes, topped with tofu ricotta with chili oil, balsamic vinegar and fresh herbs from our garden, red pepper, as well as home made potato salad, kale and some of the last remaining purslane.
It was a great success.
The halloumi is made with tofu and cashews and the mayonnaise for the potato salad is made with silken tofu.
