Botswana represented by seswaa! I had intended to serve this with polenta and spinach but the stove threw up an error and had to be unplugged (I have been frustrated with cook times being off and I feel validated!). Luckily, I had been roasting squash and had a salad. Not exactly traditional but it was delicious! I would make this again. Super easy and the leftovers are delicious.

Bosnia and Herzegovina are represented by Börek/Burek - phyllo pastry with spinach, cheese, and beef. I didn't make the phyllo pastry myself, I bought frozen! Relatively easy to assemble. Tasty and oodles of leftovers! Now that we are also doing simultaneous meal and dessert adventures, I have upgraded my tracking system from chicken scratches to spreadsheet!

Bhutan is represented by Kewa Datshi! This is a cheese and potato dish. According to the recipe, feta was a reasonable substitute for Datshi (Bhutanese cheese) but as I have never had Datshi, I can't say. That said, this was delicious and I am glad there's lots of leftovers!
