I have a connection to my equipment and jars. Some of the equipment is older than me. Some of the jars were my grandfathers. Just a different way of looking at reusable.

Fellow #canning enthusiasts: check your vinegar. Several brands have started watering down their vinegar, bringing the total acidity down to 4% - but most safe recipes were tested with 5% acidity vinegar.

Then came the point of the evening when I realized that past me’s quantity of salsa jars was incorrect but I was in too deep.
Also, getting ready for canning day tomorrow with a mix of harvesting, donations from friends, and a farm market trip. Just need to swing out to the farm stand tomorrow for some red onions and then it’s all salsa all day!
