This 2008, bottled 2012, is perfect for drinking now--the Vinsanto category holds well, with those sundried grapes (Assyrtiko + 10% Aidani).
There's fine tension, a mouthwatering finish with plenty of sugar and there is a fair hit of alcohol this year (14.5%). It handles itself well, though, and you'll be thinking about the sugar and fruit. Sundried styles on Santorini are a lot of fun.
This is perhaps not a great example, but a good one.
Tasted this charming vin santo rosato last evening. The pink version, called "ochio di pernice," or eye of partridge, must include at least 50% Sangiovese mixed with the more customary Trebbiano and/or Malvasia. This wine has 150g RS but firm acidity, and it was a good dredge for our orange almond biscotti.
