There was one problem to solve:
Turns out not consisting of 55% sugar brings down shelf life after opening.
"Consume within 5 days! Keep refrigerated!" said the tin.
So the solution was: freeze it!
Got some silicon ice cube mold, filled it with the condensed coconut cream.
it doesn't freeze rock solid, but more like hard ice cream.
Which it.. kinda is. Sweetened condensed milk, flavoring (being coconut milk it tastes like coconut) and a binder. In this case guar gum.
Which also keeps it from splitting when nuking it a few seconds in the microwave to thaw.
After that just get your Phin dripper ready.
Pull a strong coffee from it (with the right beans), directly over the sweetened condensed coconut milk.
Stir and enjoy a great #VietnameseCoffee.
Strong, sweet, bitter, chocolaty, coconutty & creamy.
So that's a win!
(I also popped one of those little frozen cubes into my mouth and if you let it melt slowly, it tastes like ice cream .^ )
