Fall at the Meadowlark Botanical Gardens

After having dinner in Reston and staying overnight at the AC Hotel, we visited the Meadowlark Botanical Gardens in the morning. We saw the preparations for the Winter Walk of Lights as well as various flowers and a few birds. After, we had lunch in Vienna and visited the Leesburg Premium Outlets before returning home via Frederick.

I went to 2 #NoKings events yesterday -- #ViennaVA & #McLeanVA -- my first 2 protests ever. I had no idea what message I wanted to send, but what I settled on worked out. When I got to each event, I was nervous at first (#introvert), so I just walked behind the crowd to check it out. In each case, I stopped and stood next to someone who complimented my sign (notably, others had similar messages) as I was walking by and had a good conversation with them as we cheered the cars honking in support.

Banh xeo from Pho Hai Duong Vienna 🇻🇳

#banhxeo is a #vietnamese savory #crepe made with rice flour, turmeric, and coconut cream.

Chunks of seared pork, shrimp, mung bean and onion are cooked into the crepe, and it’s filled with bean sprouts and green onion.

To eat, tear off a piece of crepe and put it on a lettuce leaf. Top it with pickled veggies, fresh basil and mint leaves, and roll it up like a wrap. Dip it in sweet and sour nuoc cham sauce, and enjoy!
