Ripe #truffles give off a combination of volatile organic compounds (VOC). There have been over 200 VOCs identified in various truffle species and each truffle has a unique combination that makes up the aroma profile.

Last night's freeze has me excited. #PNW #truffles love these cold overnight temperatures. The #dogs and I are looking forward to our next hunt.
