After some testing and usage of these Sonoff and Thirdreality temperature sensors, while the Thirdreality sensor was more fiddly to get running, it seems to work a bit better, is a bit more responsive to changes, and is actually configurable.

So far, I'm leaning heavily towards standardizing on the Thirdreality sensor.

I'd been using a Centralite Zigbee temperature and humidity sensor for monitoring outdoor climate stuff at my home. I wanted to put one inside the box with my Meshtastic node and batteries, but this sensor isn't available anymore, it seems.

So I bought 2 other brands I've used: Thirdreality and Sonoff. They have both been fairly solid for me.

Sonoff is more compact and uses a magnetic mount to make battery changes and whatnot easier, but it uses a coin cell battery of a size that is different from every other device I have. This makes something like 5 different coin cells I would now have to keep track of. It's larger than a 2032 and it should last longer, sure. But these oddball sizes like 2477 are more difficult to find and often WAY more expensive.

I got some Thirdreality door sensors to replace some failing ones that also used an oddball coin cell size, but these new ones use AAA batteries. Sure, the sensors are a little larger, but that doesn't bother me. AAA batteries are easy to get, cheap, and should last longer than these coin cells. So I was pleased to see their temp sensor also used AAA batteries.

The Sonoff joined my zigbee network easily and started working pretty quickly. However, zigbee2mqtt had trouble interviewing the Thirdreality sensor. This is the first Thirdreality device I've had trouble with. I did manage to get it to complete an interview. Thankfully, just retrying the interview a couple of times got it fully functional.

I'm going to put both of them in the box and evaluate them. I might replace my Centralite sensor with whichever one I end up liking most. I really like the idea of switching as much as possible to sensors that use more standard batteries, though. Hopefully Thirdreality pushes a firmware that makes these work better. In my experience, they do maintain their firmwares rather than fire and forget.

It's kinda interesting my Zigbee devices seem to be coalescing on just a small number of brands (Philips, Thirdreality, Sonoff, possibly Sengled, seeming to move away from Centralite).
