Adventures in sweetener aka give sweeteners a chance…

Got my bottle of monk fruit. A drop on its own, very sweet and bitter, not entirely different from stevia. Thought to try both those and Allulose with hot chocolate, using my raw cacao.

Made three cups, filled a third of each with milk and half a teaspoon of cacao, then couldn’t taste the cacao.

Regardless, added a tiny bit of stevia to one, a drop of monk fruit and a tiny bit of allulose to the other two.

Was able to add more allulose since it was very mild once mixed, as they all were.

So, initial test shows they can all play nice with milk and cacao. It’s a start ☺️

It would be that bit easier if I could buy ready-made stuff with no added sugar, but I have such a thing against most sweeteners (nearly all that you can buy uses Sucralose or erythritol). I need to make some more brownies or cookies, I’m just lacking spoons and also need to use the Pulsetto and Thumper. Bit of a Catch-22.

I ordered a bag of Allulose, not sure if I mentioned it here when it arrived. It’s made from sugar and said to taste like it, like sucralose but safe for the insulin, unlike sucralose. But I find it horribly bitter, so that’s fun.

Monk fruit, perhaps? Or I try powdered milk to calm the bitterness of cacao. It’s a lower glycemic index than coconut milk, but if it’s less sweet, I might want to add more, and they’d end up the same amount of sugar anyway 🤨

Reminded of that hymn “one more step along the world I go”. One more sweetener that does not taste as described. Allulose is hecking bitter. Why 😖 Off to buy that expensive bottle of monk fruit. They do say it can last months. It’s £19 so high, but not unfathomable.

Coconut milk powder is lovely, but actually quite high in carbs (65%) and with some sugar (9%). I didn’t realise at first. Dairy milk is lower in carbs and sugar, lower glycemic index. I could switch to that (the milk, not the Cadbury bar).

Allulose only just saved that soapy 100% chocolate, replacing soap with bitterness. I don’t know if it’ll improve once it’s in something baked.

Must I hate so many sweeteners. Autistic brain won’t be helping me here.
