Had to let them ripen for nearly two weeks, but ended being perfect.
It's not summer without a jam making session.
Farm had mis-shaped strawberries on sale for 2€/kg, so I got 4kg, sugar and pectine and that's 19 jars of low sugar jam for the pantry.
With thanks to @jan for helping chopping the berries and handling the sterilising of jars.
