Further misadventures in sugarfree baking. I have ordered a bottle of liquid monk fruit. It might be the last sweetener I want to try.
Anyway, I made some cookies with almond flour, cacao powder, plus coconut milk powder and a little cinnamon powder in the hopes of less bitterness from the cacao. No sugar or sweetener beyond the natural sugar in the coconut milk.
I guess these recipes really do need the solid chocolate they all list because cacao powder doesn’t seem strong enough, but without much sweetness, it might be a moot point. These taste quite flat, mostly bitter and soapy as full-on cacao does.
Milk has a little natural sugar too so I put two of my rock-shaped cookies, broken into pieces, in a bowl of milk and ate it like cereal. It was a slight improvement.
Now have a list of ideas for flavours other than chocolate if I can’t use a sweetener, though I doubt many will be that great. Cinnamon, perhaps, idk.
