#SoleMeunière, a classic French recipe with fillets of sole that are lightly dredged in flour and sautéed in beurre noisette (brown butter) and garnished with cut parsley and lemon juice. It’s typically made with Dover sole, but I used Petrale. It’s served here with pommes Anna or Anna potatoes, plus sautéed green beans dressed with whole grain mustard.
