Why are some chefs so obsessed with poached eggs? All dishes in their restaurants turn into a "unique interpretation," where eggs are poached, no matter how they should be prepared in the dish. Yesterday in the restaurant, I was served a "shakshouka" where separately poached eggs were simply placed over a sauce. But they proudly call it a "Classic Shakshouka" on the menu, and a waitress just said, "That's just the way they serve it," when I asked.
