Now is the time to eat as much fresh food as you possibly can, preparing your body to get through the winter to come. Without paying the out-of-season tax to each it in the same quantities in a few months time, when your body starts craving it.

Juice of two lemons
Cooked to 220F

Today I made quince paste. This stuff is so amazing because (like all cooked quince) it changes color while cooking from a dull pale yellow beige to deep and alluring garnet. This might be the sexiest food.
