The salsa that I spoon over the salmon here is an explosion of contrasting flavors – sweet, salty and sharp – common in Sicilian cooking I like serving this with sautéed greens and some bread.

What's cooking? It's Seafood Sunday around here tonight. I've used Croaker, Grouper, Sea Bass and Mahi Mahi for this dish, equally well. Served with some sautéed greens and saffron risotto on the side for all that delicious tomato sauce. Ingredients as pictured: tomato sauce is made with the passata and other ingredients, and the fish is submerged in the sauce to cook in a hot oven for 15 minutes.
