ไม่เหมือนปศุสัตว์ หมู ไก่ เนื้อ ฯลฯ ที่ทุกที่ทุกประเทศเลี้ยงสปีชีส์เดียวกัน ปลาที่ขายที่ #สกอต์ลันด์ หลายชนิดเป็นปลาที่ชื่อไม่คุ้นหูเอาเสียเลย แต่ก็คงไม่แปลก เพราะปลาเป็นสัตว์มีกระดูกสันหลังที่มีสปีชีส์หลากหลายที่สุดในโลกนี้ (อาจจะเกี่ยวกับที่เนสซีวิวัฒนาการขึ้นมาในทะเลหรือเปล่านะ) เพราะฉะนั้น ตาม #เนสซีสัตว์ประหลาดจากทะเลสาบล็อคเนส มารู้จักกับปลาที่ขายที่สกอต์ลันด์กันเถอะ

1. #Salmon
ปลาที่ขายกันแพร่หลายที่สุด ที่เรียกกันว่าไปขายกันทุกร้านสะดวกซื้อ คงหนีไม่พ้นน้องปลาส้ม แซลม่อน (salmon) ที่คนไทยชื่นชอบกันนั่นเอง ความจริงปลาแซลม่อนมีหลายสปีชีส์ ปลาแซลม่อนฝั่งมหาสมุทรแอตแลนติก คือ สปีชีส์ที่เรียกว่า Salmon salar ที่อยู่คนละสปีชีส์กับแซลม่อนฝั่นแปซิฟิก ที่สกอต์ลันด์นี่เลี้ยงกันมากมายตามชายฝั่งต่างๆ
แซลม่อนเป็นปลาที่มีไขมันสูง (อาจโต้เถียงกันต่อเรื่องประโยชน์ทางสุขภาพต่างๆ ได้) แคลอรีเลยค่อนข้างสูง แต่ปลาชนิดนี้คงไม่ต้องพูดถึงเยอะเท่าไหร่ เพราะเป็นที่รู้จักกันดีอยู่แล้ว

2. #Cod
จะเรียกว่าเป็นขั้วตรงข้ามของแซลมอนก็ได้กระมัง ปลาคอด (cod) ซึ่งความจริงก็มีหลายสปีชีส์เหมือนกัน เป็นปลาเนื้อขาว ไขมันต่ำ และส่วนใหญ่เป็นปลาจับ (ไม่มีฟาร์มเลี้ยง) ร้านอาหารในไทยบางร้านจะเรียกว่า ปลา #พอลลอค (pollock)

ปลาคอดราคาถูกกว่าปลาชนิดอื่นส่วนใหญ่ (ในสกอต์ลันด์) เนื้อปลาคอดจะมีกลิ่นเล็กน้อย ถ้าเอามาย่างมาลวกอาจจะได้กลิ่นอยู่บ้าง เคยลองทอดแล้วกลบกลิ่นได้อยู่ หรือมิฉะนั้นอาจลองเอาไปใส่เป็นอาหารรสจัดๆ

อาจจะเป็นของเรียกว่า ปลอมตัวมาเนียนๆ หรือเปล่า เพราะเมื่อใครได้ยินคำว่า sea bass คงนึกถึงปลากะพง แน่ๆ แต่ sea bass ที่ขายในสกอต์ลันด์ (จับมาจากทะเลเมดิเตอเรเนียนเป็นส่วนใหญ๋) เป็นคนละสปีชีส์กับปลากะพงไทยนะ

ปลาที่เรียกว่า sea bass ในสกอต์ลันด์ เป็นปลาที่มีชื่อว่า Dicentrarchus labrax ที่แถวทางอเมริกาเรียกว่า branzino ส่วนปลากะพงขาวในไทย คือปลา Lates calcarifer ที่ทางออสเตรเลียเรียกว่า barramudi
ปลา sea bass (branzino) จะตัวเล็กกว่าปลากะพงไทย ลองดูคุณค่าทางโภชนาการแล้วเหมือนจะมันเยอะกว่าเล็กน้อย ในภาพรวมคือ ไขมัน โปรตีนและพลังงาน เยอะกว่าปลาคอด แต่น้อยกว่าแซลมอน
