1kg diced rhubarb, 800 g. Sugar, 100ml water, one lemon (squeezed and then cooked with the rest). Makes about 4 or 5 jars.

Cut back the rhubarb again due to another incoming freeze and made Blubarb coffee cake. Used this Betty crocker recipe but doubled the rhubarb, used 1/3 c sugar in crumble, 1/4 c less sugar in the cake batter and used butter instead of shortening. Also didn't do the glaze. Came out perfectly and delicious. PS our rhubarb is more greenish than reddish because full sun at 7000 ft.
