I think my child forgot about one of his all-time favourite dishes when he wrote me a list for MY birthday with dishes that HE would like to eat again - but I know about this one anyway 😇

This one takes a fair amount of preparation and baking time but it’s always so worth it!

Have you ever had proper Polish pierogi? They have really interesting fillings and taste just great, even when bought ready made. Since we hadn’t eaten these for a while and the son requested them I had bought two packs at a mobile Polish food stall that stops nearby every week, one filled with mushrooms with sauerkraut, the other with meat.

Traditionally pierogi are served with simple toppings: sour cream, chives, dill, fried onions, bacon, or melted butter are all common ingredients. Apparently they are also eaten with sauerkraut, or mushrooms fried in butter, possibly with added onions and bacon.

I still had some leftover white and red cabbage, so I took those to replace the sauerkraut. I really liked the thought of mushrooms and got out chanterelles in a jar and warmed them up in melted butter. Instead of bacon I used a bunch of small pork sausages I had brought at the same Polish food stall as the pierogi, cut them into pieces and fried them.

We ended up with a quickly prepared hearty winter meal that all of us enjoyed.

I came across the inspiration for this when I was living in London in the 1990s, living in Windsor Road.

These nicely seasoned chickpea flour pancakes are still high in demand in this house despite the discovery of okonomiyaki. I especially love them with anything tomato flavoured, be it ketchup or a simple tomato salad. A selection of Indian chutney dollops also works well, and why not just have everything together? 😅

A little while ago we tried some German letscho from a jar which was not too bad but just couldn’t compare to the homemade Hungarian style one that I once found on a page on the internet that does not exist anymore.

The recent sausage and bacon presents I got from my nephew were perfect for this: it is an absolute festival of bell peppers, paprika, pork sausage and pork grease I’m afraid. Maybe not super healthy but definitely full of taste! The Hungarian cucumber salad (no photo, sorry) was the perfect side dish.

I had my lecsó with German potato dumplings, my son had spätzle (a type of German pasta).

For meatless Monday I decided that Szechuan Dry Fried Green Beans and Chinese Street Style Fried Tofu qualified both for this category and I think my son agreed when he ate the dried red chilli 🥵😅

I used a type of coarse soy mince with the beans, so really the piece of tofu wasn’t necessary.

On the weekend my husband made us a Jamie Oliver version of this famous dish. J.O. has a very mixed reputation when it comes to cooking non-British food but I don’t mind, usually it tastes quite good and once you start viewing everything through the fusion food lens, it really doesn’t matter whether it’s absolutely true to “the original”. With a dish like this nobody even knows where exactly it was created at the time it came to be known (in the 1960s) and it seems to be based off butter chicken:

Here we have “the Japanese pasta with the bacon thing we used to eat a lot” 🤣 I love this Japanese fried noodle dish because of the Dashi (tuna based stock) sauce, my guys love this because of the bacon - actually I think it is exactly the mix of the two aromas that make this so moreish.

We already had a pasta experiment the other day, the garlic lime pasta which was an unexpected success. For this experiment I resorted to a more classic tomato sauce but with fresh tomatoes rather than tinned ones. Normally I like my tomato sauce quite thick but every now and then the lighter texture created by fresh tomatoes is refreshing.

I was specifically looking for a way in which I could use up more of my nephew’s meat and vegetable paste presents and ended up with something that seems to have come straight from the 1990s, only that it was a lot spicier than expected.

I thought paprika paste would work well in this tomato sauce but had completely forgotten that the paste was the spicy version, so I used plenty without even thinking about it. The result was fiery and my face was like this when eating: 🥵 Thankfully the sliced small paprika spiced sausages my nephew gave to me didn’t add any heat at all, just meaty yumminess.

Another dish that gets requested again and again by my son is this yummy Japanese pancake made with cabbage and Dashi (tuna stock) in the dough.

Many years ago savoury pancakes that are not just made of egg, flour, milk and sugar were a revelation to me 😂😅 and the more of those I’m trying out, the more I fall in love with them.

These ones can be made with whatever you like; we usually go for bacon, mushrooms, and leafy greens. On top goes mayonnaise and Okonomiyaki sauce plus Katsuobushi (Bonito flakes). The flakes add a special touch as they are starting to ‘dance’ when they soak up heat and moisture from the pancake.

The recipe I’m using comes from a German magazine and I think despite the writer being taught by a Japanese person it might have been adapted slightly to food items available in Germany:
