Saved our share of chillies from the CSA for a few weeks (could only harvest 4/adult/week **) so I could start a batch of fermented sauce.

One onion, some garlic, a bunch of chopped chillies in a 5% salt brine with black pepper & Sichuan pepper. Will ferment it for a couple of weeks before turning it into sauce by adding it to some cooked bell peppers & maybe some more onion.

I know using a zip bag filled with water is not the best. I have to find some weights that fit this jar.

** At the end of the season I will probably be harvesting a LOT of chillies because we're one of the few members that like spicy food.

A while ago (I won't confess how long ago) I put a jar of minced Lila Luzi ( https://fryd.app/en/library/plants/7588-chili/varieties/1560-peperonililaluzi ) in the pantry to ferment in a 3% salt pickle solution.

Today I processed the long fermented mash with some onion, garlic, sugar and apple cider vinegar into a delicious flavourful and spicy hot sauce that builds up and hits you when you no longer expect it.

Lila Luzi - How to plant, grow & harvest | Fryd

Purple Luzi is a decorative, very small-fruited, richly fruiting chili with purple leaves. The very hot fruits ripen from purple to yellow and orange to red. Especially suitable as an attractive pot or tub plant. Also suitable for growing outdoors. For salsas, sauces and dips. The chilies can be dried very well and are then ideally suited for the spice mill.

Sixth week of harvesting hot peppers in the greenhouse of our #csa and stringing them with cotton yarn, so we can hang them to air dry in the nice dry & warm entry hall (thanks inverters!).

We will be set for the winter 😊

Convection oven at 95°C, 5 or so hours. (check every now and then to make sure they don't burn, remove the dry ones).
