1kg diced rhubarb, 800 g. Sugar, 100ml water, one lemon (squeezed and then cooked with the rest). Makes about 4 or 5 jars.

Have you ever tried making your own chutney or pickle? It's super easy and tastes so good. You can even sterilise jam jars in a dishwasher if you have one (oven if you don't). This one is a good place to start. Apple & Red Onion Chutney.

Just three bitter orange half-rinds left to strip of pith and slice into fine julienne strips! Three of, let's see … 14 x 2 = 28 … twenty-eight in this batch, and only one batch left to finish processing the season's harvest into marmalade! Feeling just a bit πŸ€ͺ ATM, but I *have* learned that these long-delayed batches (harvested in December or January) have particularly excellent flavor.

I love marmalade. It is another of my vices, alongside beer, liquorice, and pastries -- the Danish curse! πŸ˜€ Anyway, I received an utterly humongous jar of #marmalade at Christmas. I'm working through it but I don't think I'll consume it all before it expires. And I don't think the photos here do its size justice. I mean, just look at it?! I included a mug in the second photo to indicate scale, but the jar still appears smaller than reality! Delicious though. Grapefruit and ginger. #preserves

Made three pints of bittersweet pink grapefruit marmalade.
2 grapefruit boiled whole for two hours. Sliced up fine and combined with
5cups sugar
Juice of two lemons
Cooked to 220F
