Despite the absolutely miserable weather, we had an excellent bread day today.🌾

This is leftover mashed potato toast (recipe below) with #sourdough. The lightest most gorgeous toast ever, similar to Hokkaido milk bread without the eggs, milk and butter.

It's starter, leftover mash, flour, water, salt & olive oil. Overnight cold retarded, hydration 60%.

This will make the best club sandwiches tomorrow from todays leftover roast chicken.
