*Requests by my son - Polish pierogi (stuffed dumplings)*
Have you ever had proper Polish pierogi? They have really interesting fillings and taste just great, even when bought ready made. Since we hadn’t eaten these for a while and the son requested them I had bought two packs at a mobile Polish food stall that stops nearby every week, one filled with mushrooms with sauerkraut, the other with meat.
Traditionally pierogi are served with simple toppings: sour cream, chives, dill, fried onions, bacon, or melted butter are all common ingredients. Apparently they are also eaten with sauerkraut, or mushrooms fried in butter, possibly with added onions and bacon.
I still had some leftover white and red cabbage, so I took those to replace the sauerkraut. I really liked the thought of mushrooms and got out chanterelles in a jar and warmed them up in melted butter. Instead of bacon I used a bunch of small pork sausages I had brought at the same Polish food stall as the pierogi, cut them into pieces and fried them.
We ended up with a quickly prepared hearty winter meal that all of us enjoyed.
