I made the #PitaBread recently because I wanted to make the Lebanese Arayes (meat-stuffed pita).
I'd made them a few times before and they didn't turn out as I wanted, but this time instead of using any oil on the griddle, I just spread a very thin coat of ghee on both sides of each araye. I then set the burner on medium-high and pressed them down with a wide head spatula.
