Two new champagnes will see the light and meet your glass within the next year. Today we tasted a Chardonnay from 2019 and a Meunier from 2022 to decide their dosage. This is the moment we choose how much sugar to add to the liqueur that will be transferred to the champagne in the bottle at disgorgement time. We simply open bottles, add different levels of sugar and discuss with our tasting panel what we taste and how we like it.
This is a moment of truth and also the final adjustement of taste before the bottle will be prepared to enter the world and meet you. Obviously, it’s very interesting and sometimes surprising how the champagne will come out in the glass with dosages like the 2, 4 and 6 g/l that we tried today. For instance, more sugar does not necessarily mean sweeter on the palate. Maybe not logic? It doesn’t have to be. This is what we actually experience and not what we think we ought to find, because of this or that parameter. We are pleased with the two bottles as they will help us broaden our « singles » series assortment that have found many friends and buyers. Actually so many that we welcome fresh supplies this autumn. We look forward to share more with you.
