@DrOinFLA and for what it's worth, anyone who has cooked food from scratch in country areas may be accustomed to cooking with animal parts like bones, tendons, and other body parts including "sweetmeats" / offal. That expensive bone broth some people buy at supermarkets is the commercial version of standard #PeasantFood. With #CostOfLiving pressures, cooking without waste is a good move.
