Gonna have a bumper crop of parsnip. This planter is tricky to grow most vegetables in. It gets sun in the spring, but the trees overhead shade it too much for most veggies in the summer. After a lot of experimentation, I discovered parsnips are happy here. There is one end of the planter that does get sun, and that's where I'm growing tomatillos this year. #gardening #parsnips

I'm middle aged but I never ate parsnips, that I'm aware of, until today.

They're a bit sweet, yet much more flavor than I expected. And pretty cheap, and easy to cook!

Maybe 2025 won't be so bad after all.

Good morning humans! My #breakfast this morning is not only not-noodles - it's also #vegetarian! Fried up #mushrooms and #eggs, enjoying them over some leftover pureed root vegetables. Not the healthiest of vegetarian dishes, but probably better for me than bacon.

Is it just me or are the smell of fresh #parsnips invigorating? Their scent is just like all sorts of freshness, some celery, some parsley, a hint of fennel.
