Ingredienti:
2 uova sode
1 melanzana
2/3h di prosciutto cotto
1 passata di pomodoro
Sale
Olio
Farina
1 mozzarella
Cipolla
Aglio
Preparazione:
Lasciare le melanzane con sale grosso per 30 min, farle friggere nell'olio e poi ricoprirle di farina.
Fare 2 uova sode
Tagliare la mozzarella
Preparare il sugo soffriggendo cipolla e aglio
Preparare a strati la parmigiana, mettendo melanzane, passata, mozzarella, uova e infine prosciutto su ogni strato.
Cuocere a 200° in forno per mezz'ora
Lovely roasted potatoes (partially boiled before I put them in the oven): olive oil, salt & thyme for 20min took out, sprinkled with parmigiana cheese & back into oven for another 10min
Crispy on the outside & fluffy on the inside
