Periodic reminder that you can eat pancakes any day of the year, and the world hardly ever implodes.
Also if you add a pear to them, they're basically part of your 5-a-day. 👍

3 tsp baking powder
1 tsp fresh ginger (minced tiny)
2 tbsp margarine
1 pear (diced tiny)
2 cups plain flour
1/2 tsp salt
2 cups soymilk
2 tbsp sugar
1 tsp vanilla
I melt the margarine and mix the other wet stuff into it, mix the dry stuff in a jug and then add the wet to it.
