In one of the courses I gave I did accept the usual "you're allowed to bring 1 hand written page, double-sided, of notes to take into the exam. No printing, no copying" approach and had them hand in their note pages afterwards.

The notes were actually a surprisingly good predictor of the exam results modulo a few other effects.
And I'd say that the best ones probably weren't really used much.

Personally I did do "printed notes" once because they were allowed and it was just as messy as the original hand written notes process and boy is LaTeX a PITA to produce such tightly layouted sheets.
