I recently took what felt like a wild gamble on a #fish #recipe: pickled #pike. We caught a ton of northern pike over the summer, and I still had some meat frozen in our freezer, so we took a crack at pickled pike, and it was a great call. The meat firms up well in the pickling brine and takes on a complicated sour-spicy-sweet flavour that's genuinely special and delightful.
