@dom Because the word venison isn't English, it's from Norman French.
Venison was used by the ruling Norman invaders for other hunted game too, e.g. rabbit since it's from the Latin “vēnārī” – “to hunt”. Once the animals became food they got Norman names because it was the ruling class that was allowed to eat them - see also pig (English)/pork(French).
Andy is being posh and therefore using the term introduced by our occupying overlords.
