Third and final load of laundry is in the dryer.
The other two have been folded and are ready to put away.
Lunch was cold boiled shrimp with cocktail sauce and steamed broccoli florets with butter.
Dinner will be beef enchiladas, a very easy recipe based on one from Old El Paso's site. Browned ground beef, red enchilada sauce, diced green chilis, and shredded cheese wrapped in high-fiber, low-carb wheat tortillas. A favorite here.
The day is dragging terribly. It should be mid-afternoon by now.
